Paul Chuanchaisit is a Los Angeles-based chef and culinary creative known for bold flavors, refined technique, and storytelling through food. As the current Chef-in-Residence at Cardinale du Vin, Paul brings a new edge to Westside dining with a menu that fuses traditional Thai roots with global influence and precise execution. His work reimagines comfort food through a modern lens—think Thai-style steak frites, tom yum crudo, and pandan tiramisu.

Paul’s journey began in the kitchen of Sapp Coffee Shop, progressed through rigorous sushi training, and refined at the avant-garde kitchens of Destroyer. Along the way, he launched Hangry Thaiger, a Thai comfort food pop-up, and DAG at Los Angeles, a private dining experience that showcases his playful, raw, and unapologetically honest approach to cooking.

His mission? To challenge expectations of Thai cuisine—elevating it without compromising soul—and build spaces where food connects people with nostalgia, emotion, and a sense of wonder.
